They are freelancers. It’s how they get paid, and it works, so don’t fk with it. Compare customer service in USA with anywhere else. No comparison. 10% min, 15% general 20% good. And make sure you know the difference between a server failure and a kitchen failure.

@curtdoolittle @AJA_Cortes This reminds me, what is your position on tipping service work? Are the Americans (Who generally Tip) in the right or Euros (Who generally don’t). I personally hate it at restaurants, but don’t mind tipping barbers.
